Winemaker Notes
Separate blocks were harvested over a span of two weeks, de-stemmed, and the whole berries left briefly to cold soak. A combination of feral and cultured yeasts were used on the separate tanks, each contributing unique characteristics. Once fermentation was completed, a short maceration of 16-20 days took place before being pressed to barrel. Lots were rigorously tasted, with only our best chosen.
